Orange Chicken

Isn’t it funny the things you crave once you start to eat healthy? Never have I ever wanted to make orange chicken at home before I was on the IBD-AID diet. Alas, here I am whipping up a better than takeout version of orange chicken.

And it is really good. I love all the fresh ingredients, especially the citrus. I juiced the orange myself and added all ingredients into a measuring cup. So easy! I know you’ll enjoy this .

marinade for 2 chicken breasts

You’ll need …

  • 1/4 c orange juice, freshly squeezed (1 orange)

  • 3 Tbsp honey

  • 1 Tbsp toasted sesame oil

  • 2 Tbsp coconut aminos (can sub Tamari)

  • 1/2 tsp minced garlic

  • 1/4 tsp ginger

  • 1 Tbsp tomato paste

  • 2 chicken breasts (we prefer breast, but you can use thighs as well)

  • Salt and pepper for chicken before marinading

What to do …

  1. Add all ingredients up to the chicken into a bowl and whisk thoroughly.

  2. Salt and pepper chicken and cut into cubes.

  3. Add chicken to bowl and let sit in the fridge for an hour up to 12 hours.

  4. Heat a cast iron skillet to medium with olive oil to prevent sticking.

  5. Pour the chicken with the remaining marinade into the cast iron skillet. Allow to brown and continue to stir the chicken. Over time the marinade will thicken and stick to the chicken. Once chicken is cooked through and marinade is thick, it’s done! This step takes about 10 minutes.

  6. Best served immediately with brown rice :)
