Savory Groats Risotto
Just when I thought rice was long gone in my foreseeable future, cue savory oat groats.
Savory oat groats are the new, healthier twist on a risotto. At least the way I’m making it!
You’ll need …
1/2 medium size onion, thickly sliced
2 garlic cloves, chopped
1 c steel cut oats or oat groats, gluten free
2-3 c veggie broth
salt and pepper
1/2 c freshly grated parm, plus more if desired :)
What to do …
In a medium size sauce pan cover bottom with EVOO. Warm on medium heat. Sauté onions and garlic until fragrant and onions are clear.
Add groats and sauté until lightly browned. About 3 minutes.
Add broth and salt and pepper to taste.
Stir and then cover. Continue to stir occasionally for the next hour. If the water level decreases, add more as necessary. Continue to cook until groats are tender.
Once tender, add in parm. Serve immediately.
