Strawberry (n)ice Cream
Ice cream that’s 5 ingredients or less. Sign me up!
This recipe does not need any further introduction. I mean, it’s ice cream, without the dairy or sugar or processed stuff or eggs. Although, when I used to make a traditional ice cream I never used eggs anyway....
The flavor is totally up to you. I had a ton of strawberries in my fridge, so those were my go to. I also had a bit of frozen raspberries left over and I tossed those in at the end of the blending.
If you can handle chocolate, try Hu Kitchen chocolate, chop that up and toss it in post blender.
You’ll need...
2 c water
1 c raw cashews
honey to taste
2 c ripe strawberries (fresh or frozen)
1/4 c raspberries
Blender
What to do...
Freeze your ice cream bowl completely before starting the cashew milk.
In a high speed blender, blend your water and cashews for 2 minutes on high
Add honey to your sweetness taste. Start with 3 tbsp I’d say.
Add your berries and continue to blend on low/med depending if you want some chunkiness
Place mixture into fridge for a half hour.
Pour mixture into ice cream maker and let it churn for ~ 20 minutes. The longer it churns the more frozen it becomes.
Either eat fresh, or place into a freezer safe dish and eat as a treat for days!
