Gluten Free Sautéed Veggie Rotini
Quick, easy, made in under 20 minutes.
Right here is my go-to, so hungry, throw a buncha veggies into a pan. It is so quick to make. In fact, I dice, season and sauté all my veggies while the pot of water is boiling and my pasta is rolling.
My favorite vegetables to combine are usually zucchini, sun-dried tomatoes and kale. The zucchini offers a nice crunch, tomatoes provide a touch of salty sweetness, and the kale makes this pasta dish just the right amount of heartiness.
Salt, peppa, garlic (always garlic), and a touch of crushed red pepper and voila!
Oh, I definitely want to add this little note. Undercook your pasta by at least one minute. As is the case with ANY boxed pasta. Never cook past al dente. And save some pasta water before you drain. You will continue to cook the pasta in your pan and add a tbsp or 2 of the water to best combine your veg mixture.
