Baked Sweet Potato Fries

Looking for an easy snack that’s good now and later? Behold, a coveted recipe in my weekly arsenal of delicious and nutritious snacking for (me) and the babe.


Serving is for 2 with extra left over

2 organic sweet potatoes, scrubbed thoroughly*

Quality EVOO

Salt, pepper, garlic powder


  1. Preheat oven to 400*

  2. Slice sweet potatoes the long way. Continue to cut lengthwise until you have pieces that are about 1/4-1/2 inch thickness.

  3. Place fries in a bowl and toss with EVOO, salt, pepper, and garlic powder to taste.

  4. Transfer fries to a baking sheet.

  5. Bake for 10-15 minutes, turn fries over, and continue to bake for additional 20 minutes or until your crisped liking.

  6. Once fries are cooked, remove baking sheet from oven. I prefer moving the fries to a cooling rack so the EVOO doesn’t end up making the fries mushy.

  7. Enjoy immediately, or wait until cooled and place in a container in the fridge


When looking for sweet potatoes that are good as fries, look for longer ones that already resemble the “fries” shape.
