Healthy Lemon Blueberry Waffles

Whichever team you’re on, these waffles are a must try. When you’re on any kind of diet, the 1st rule of thumb is to usually ditch anything that comes in a package. Well, when you’ve been on a strict diet for quite some time, you do tend to crave the “no-no’s” like pancakes, waffles, dessert … At least I do. So then I challenge myself to recreate what I am craving into a healthier version that suits my dietary restrictions. And truthfully, to come across a brand that is within this strict parameter is like finding a unicorn.
Cue Simple Mills, a naturally gluten free snack and mix company that I truly trust and LOVE. I reserve the box for when I am pressed for time, or just don’t feel like making anything from scratch.
Today, we are baking waffles from the pancake and waffle almond flour mix. For whatever reason I was feeling super nostalgic, wanting to bake a waffle from my parents old school waffle maker. And to brighten up this (usually) heavy breakfast, I added lemon zest and blueberries. I felt like I was eating a dish from a lavish brunch spot. Are you a fan of lemon/blueberry combo?
ingredients
Simple Mills pancake and waffle almond flour mix
1 egg
2 Tbsp dairy free milk
2 tsp coconut oil
1/4 c fresh blueberries, chopped
zest of 1 lemon
hints
Preheat waffle iron on preferred heat settings
whisk egg, milk and oil in a large bowl
Add mix and whisk until well blended. Fold in lemon zest.
Pour batter onto preheated waffle iron and sprinkle blueberries evenly.
Continue to bake per waffle iron instructions
Serve with warm, pure maple syrup
