Healthy Yogurt Parfait
When you’re in a pinch, what do you usually grab for your little one as a meal?
I know, I know. In a perfect world you’d never be too busy for your babe. But let’s be honest. Because life can get so hectic and time can quickly move away from us, I like to prep myself and have an arsenal of go-to healthy meals that I know my son will actually eat.
On those busy days, yogurt it is!
I turn just the simple plain yogurt into a delicious treat by simply adding fresh berries or banana, a dollop of honey, and a sprinkle of flax seed meal.
What’s flax seed meal? It's a gluten free and low carb seed from the flax plant. It’s been used since Ancient Egypt times and can be found locally in markets today. It’s high in Omega 3s, rich in antioxidants and high in fiber and fatty acids, similar to gluten filled grains.
Did you know that you can use flax seed meal as an egg replacement? Simply add 3 Tbsp of water to 1 Tbsp flax seed meal, let it sit in the fridge for 10-15 minutes, and boom (!) you have an egg substitute.

For my son’s yogurt parfaits, I use whole or full fat PLAIN yogurt. Oh to be 1 year old again, right? My go to is usually Fage 5%, when I can find it. Make sure you stick to the plain variety though. Most other brands, especially ones flavored contain SO much sugar, and added ingredients that are gross and your little one doesn’t deserve. It’s worth the extra dollars $ for the added health benefits. Honestly, this yogurt is so thick and creamy, even the plain is enjoyable for us adults.
Layer in a to-go container the yogurt, berries, honey, and flaxseed meal. You can prep a handful of these and have them on the ready for the week ahead. Super easy!
