Healthy Spinach & Artichoke Dip

Healthy Spinach & Artichoke Dip

You’ll need …

  • 2 cloves garlic, minced

  • 1 small shallot, minced

  • 1 can of artichoke hearts, roughly chopped

  • 2 cups spinach, roughly chopped

  • 1 package of farmers cheese, 7 oz

  • 2 Tbsp mayonnaise

  • 2 Tbsp plain yogurt

  • 3/4 c Parmesan cheese, freshly grated

  • 2/3 c of spicy Gouda (you can sub non spicy here)

  • 1/3 c Monterey Jack

  • 1 tsp sea salt

  • 1/2 tsp pepper

What to do …

  1. Optional: you can sauté the garlic and shallots for a bolder flavor in your dip.

  2. Preheat oven to 350*

  3. In a medium bowl, add all the ingredients, but hold aside 1/4 c of the parm. Mix well.

  4. Place mixture into a 8x8 pan.

  5. Sprinkle remaining cheese on top of the spinach mixture, add a bit of Monterey if desired.

  6. place in oven for 20-25 minutes or until the top is bubbly and golden.

  7. Enjoy immediately out of the oven.
