Healthy Spinach & Artichoke Dip
You’ll need …
2 cloves garlic, minced
1 small shallot, minced
1 can of artichoke hearts, roughly chopped
2 cups spinach, roughly chopped
1 package of farmers cheese, 7 oz
2 Tbsp mayonnaise
2 Tbsp plain yogurt
3/4 c Parmesan cheese, freshly grated
2/3 c of spicy Gouda (you can sub non spicy here)
1/3 c Monterey Jack
1 tsp sea salt
1/2 tsp pepper
What to do …
Optional: you can sauté the garlic and shallots for a bolder flavor in your dip.
Preheat oven to 350*
In a medium bowl, add all the ingredients, but hold aside 1/4 c of the parm. Mix well.
Place mixture into a 8x8 pan.
Sprinkle remaining cheese on top of the spinach mixture, add a bit of Monterey if desired.
place in oven for 20-25 minutes or until the top is bubbly and golden.
Enjoy immediately out of the oven.
