Gingerbread Cookies
You’ll need …
1/2 c peanut butter (stirred well)
1/3 c coconut sugar
1 Tbsp butter
1 large egg
3/4 c oat flour
For the gingerbread spices, the below amount is for mild flavor (I made these for my son, so less spicy the better). If you prefer a spicier cookie, add another 1/4 tsp of cinnamon and ginger as well as another pinch of clove/allspice.

3/4 tsp cinnamon
pinch of clove or allspice
pinch of sea salt
What to do …
In a stand mixer, beat the peanut butter and sugar on medium/high speed.
Add the butter and egg and mix on low. Scrape down sides as needed.
Slowly add the oat flour and spices to the wet mixture. Mix on low.
Place in plastic wrap and use the wrap to form the dough into a disc. Put in fridge for at least one hour.
Preheat oven to 350* and place parchment paper onto a baking sheet.
Once the dough is chilled, roll out to 1/4 inch thickness and use cookie cutters to cut fun shapes.
Bake for 8 minutes or until bottoms turn more golden.
Decorate with your favorite toppings!
