PB Energy Bites
While we were just away on vacation, I came across these PB energy bites. I was SO excited.
And very pleasantly surprised by the options in restaurants and cafes for people with dietary restriction.
Well, these bites were just so freakin good! I decided to make them for my family. And I’m pretty much making two batches a week to keep up with the demand. Enjoy!!

You’ll need…
1/4 c sliced almonds
1 Tbsp chia seeds
1 Tbsp unsweetened shredded coconut
1/2 c organic and natural peanut butter (unsalted)
1/4 c raw, local honey
1/4 tsp vanilla extract
optional - chunks of paleo choco (like Hu Kitchen)
What to do…
Blend the oats - chia seeds in a high speed blender. Starting on low and slowly moving up to medium/high.
In a small bowl, mix together the peanut butter, honey and vanilla.
Slowly add the oat mixture to the small bowl mixing evenly.
Continue to add oat mixture until you feel the consistency is what you would like for your balls. When all oat mixture is added, then fold in the chocolate chunks. I used all the oat mixture.
Then roll into .6-.7 oz balls.
Refrigerate to harden.
Should make about a bakers dozen depending on the size.
