Summer Peach Salsa
Is there anything better than summer fruit and vegetable season? It’s truly my favorite and I’m teaching my son to appreciate all Mother Earth offers us.
Together we go to different farmers markets in the area, picking up whatever is freshest and making something out of it.
This long weekend we are eating the rest of our peaches and adding it into as many other dishes we can. What’s better than a salsa for a weekend packed with BBQs and food on the go?

Makes 1 bowl of salsa, good for two people*
You’ll need …
1 ripe peach, cored and diced
1/3 green pepper, finely chopped
1/2 small red onion, finely chopped
1/2 large tomato, diced
2 cloves of garlic, minced
Juice of 1/2 lime
Salt and pepper to taste
Optional - 1/2 jalapeño, finely chopped
What to do …
Dice all fruit and vegetables and (besides lime) and add to a serving bowl.
Squeeze lime juice over salsa. Add salt and pepper to taste.
Turn this quickly into a peach guacamole by adding in one ripe avocado, chopped.
*Truthfully, I could eat this whole bowl in 1 setting so maybe double the recipe if you plan to share 😂
