I’ve seen several recipes where almond butter is used in a frosting. Ive tried it. It’s good, but it’s not GREAT. Definitely doesn’t replace the beloved traditional buttercream. I’ve seen a blog shared by Danielle Walker who uses cashew butter and figured I’d give cashew butter a try. How’d I not think of that?? Now my brain is spinning on all the ways I can incorporate cashew butter into my sweet treats.
Anyway, I have yet to try this without cacao powder. I imagine it to be just as tasty as the vanilla counterpart to chocolate. If you make it without, tell me how it goes?
Currently in my home we want chocolate. The more healthier chocolate the better. Sorry vanilla!
Frosts 8-10 cupcakes
You’ll need …
1/3 c cashew butter (oil separation mixed well)
1/3 c butter, softened
3-4 Tbsp pure maple syrup (add a tablespoon at a time to increase sweetness to your liking)
3 Tbsp cacao powder
splash of vanilla extract
pinch of sea salt
What to do …
In a stand mixer, or good hand mixer, beat the butter together.
Once whipped until light and fluffy, add in the remaining ingredients. Continue to whip.
Taste, add more sweetener if your taste buds are asking for it.
Okay to store in the fridge. Allow to come to room temperature before frosting your cakes.
